Paleo Meat Loaf

I took this recipe from Katie Joel’s meat loaf and made adaptions to it to make it paleo! My family loves this and it sneaks in veggies too! Simple to make and you can vary it with what you like inside!

Instructions
  1. Preheat oven to 350 Degrees. Ling a baking sheet with parchment paper.
  2. Heat oil in skillet. Sauce the onion, garlic, and bay leaf until the onions are tender. about 3 minutes. Add the red pepper (or carrots) & mushroom (1 min), then add spinach. Sauté until tender. Stir in parsley, thyme, & cook for 1 minute. Remove from heat and let cool a bit. Remove bay leaf.
  3. In large bowl combine beef (meat), eggs, 1/2 cup of ketchup or space, worcestershire sauce, salt and cooled veggies. Use hands to mix everything together.
  4. Transfer mixture to the center of the baking sheet. Form into a loaf. Coat the loaf w remaining ketchup or sauce.
  5. Bake 1 hour or until cooked thru! Cool 5 mins then slice! Serve w a veggie *I serve it with organic rice too for my family who are not paleo*
