No Oat “Oatmeal”

I decided I was craving oatmeal but wanted to keep it grain free and less carbohydrates!  I stumbled upon this recipe this morning and decided to give it a try. It has eggs which gives me high protein along with the nuts and good fats to fill me up and start my day! Was easy to prep and make! And tastes yummy! Definitely hit the spot!  Enjoy!IMG_2834

Ingredients

Instructions
  1. -Add walnuts, pecans, flax seed and spices to a food processor and pulse mixture to a coarse grain (make sure to stop before it is ground into a powder). Set aside.
  2. -Whisk together eggs and almond milk until the consistency thickens and becomes a loose custard.
  3. -Thoroughly blend the mashed banana and almond butter together and add it to the custard, mixing well.
  4. -Stir in the coarse nut mixture.
  5. -In a medium saucepan, warm the mixture on the stove until the "no-oatmeal" reaches the desired consistency and the whisked eggs look firm as though cooked; this should only take about 5 minutes. Stir frequently.
  6. -Sprinkle pumpkin seeds and berries on top. Add more almond milk if desired. (can omit pumpkin seeds)
  7. *Any NUT will work* NOTE: peanuts are not nuts
Recipe Notes

Variations:

-omit almond butter and use a different nut butter (or no nut butter at all)

-omit almond milk and use coconut milk

-use any spices you desire (i used pumpkin pie spice too)
